Sour Cherry Negroni

Found this at the Hawksmoor in London and has been a staple ever since. Add as much Amaretto as you need to offset the tartness from the cherry.

The Sour Cherry Negroni is a contemporary twist on the classic Negroni, crafted at Hawksmoor NYC, the New York outpost of the renowned UK-based restaurant group. Developed by head bartender Adam Montgomerie, this variation was inspired by a previous cocktail, the Sour Cherry Americano, featured at Hawksmoor’s UK locations. Montgomerie adapted the concept to better suit the New York palate by transforming it into a Negroni, incorporating gin to elevate its profile.

The cocktail combines London dry gin, Campari, Martini Rubino vermouth, Tempus Fugit Crème de Noyaux, and an acid-adjusted cherry juice. The addition of Crème de Noyaux, an apricot and cherry kernel liqueur, introduces a subtle nuttiness, while the acid-adjusted cherry juice imparts a tart, fruity depth. This innovative blend offers a harmonious balance of sweet, sour, and bitter notes, resulting in a visually striking and flavorful drink that has become a staple on Hawksmoor NYC’s cocktail menu.

Sour Cherry Negroni Cocktail

Ingredients

  • 1 oz. gin
  • 1 oz. Campari
  • 1 oz. sweet vermouth
  • 1 oz. sour cherry juice
  • splash of amaretto liqueur

Instructions

  1. Combine all ingredients in a glass with ice and stir.
  2. Add amaretto to taste.

Garnish

Garnish with a lemon twist.
