Penicillin Hot Toddy

The Hot Penicillin is a warm, winter-ready variation of the original Penicillin cocktail, created by heating the honey-ginger-lemon base or preparing the ginger-honey syrup as a hot infusion. This version is then blended with Scotch to produce a cozy, toddy-like drink that retains the soothing qualities of the classic while adding depth and heat. Its construction mirrors the comforting logic of traditional Hot Toddies—whisky, honey, citrus, spice, and warmth—but distinguishes itself through the Penicillin’s signature ginger bite and smoky Islay Scotch notes rather than plain whiskey and hot water or tea.

Bon Appétit highlighted the Hot Penicillin as “the winter cocktail of choice,” praising its richer, spicier, and more aromatic profile. Its layered flavors make it a compelling alternative to the standard Hot Toddy, offering a drink that feels both therapeutic and indulgent. Over time, this warm adaptation has earned a reputation as a go-to cold-weather cocktail for those seeking deeper intensity and modern flair in their seasonal sipping.
